Earlier tonight the top of Safari changed its own look. It went from displaying black letters and icons in a white/grey background to displaying white letters in a dark background. How do I get it back to how it was?

Sounds like you had been using private browsing and turned it off. Hit the + sign to open a new tab and you will the work PRIVATE in the bottom-left corner. If you toggle it on again, you should see the darker themed window. This is a visual cue you are in private browsing mode.
Tappng "Private" will enable/disable Private Browsing and change the colour on top of screen from black to white.
Look in the lower left corner of the Safarii page to see if you turned private on. Tap it if it is dark.
