I had an itunes account under a previous employer and used my work email as user name. Now, I can not delete the account and no longer have ccess to the email associated that account. How can I delete old itunes accounts???
You cannot delete accounts, you can only stop using them. Does the account have private information in it such as a credit card number? If it doesn't then don't worry. Note also anything purchased through the acount remains permanently linked to the account.

You don't need to delete it.
Simply update it with your current info.
I suppose I am not sure what is meant by "under a previous employer". I take this to mean it was used for work related things such as buying work related apps, and possibly for a device owned and retained by the company, in which case the OP may not have any reason to want to continue to use that particular account.
You don't need to. Simply update the email address to a new one which you can access. Go to appleid.apple.com and make the necessary changes.
