If you do back it up to the computer it will still save the passcode lock. But if you do have an Apple ID I suggest you log into that and back it up to the computer so it's saved and then reset it as a new iPod. So when you do use it it will say restore from iCloud or computer. Press computer, then it should say connect your lightning cable to iTunes. And then sync all your content to your iPod. It will have a pop up on your iPod asking would you want to keep the passcode lock from the iPod before resetting it? Just say no. And it will not show on the lock screen.

Sign into your Apple ID

Backup iPod touch

Reset ipod

Continue going through the steps until it asks you if you want to restore from the cloud or itunes (chose itunes)

Connect the ipod to itunes.com

Restore your content to the ipod

Once that's complete, it will ask you if you would like to keep your pass code lock (shown in lock screen).

Press no.

It should Work fine.

Disabled

Place the iOS device in Recovery Mode and then connect to your computer and restore via iTunes. The iPod will be erased.

If recovery mode does not work try DFU mode.

If you restore from iCloud backup the apps will be automatically downloaded. If you restore from iTunes backup the apps and music have to be in the iTunes library since synced media like apps and music are not included in the backup of the iOS device that iTunes makes.
