How can I delete thousands of emails on the iPad and iPhone in one go.? Is there a SELECT ALL - DELETE ALL somewhere which I haven't yet found.?

No. Login to your account online, delete the mail at the server level, then delete the accounts on your iPad & iPhone, then set them up again.
