Default for pages 5.1?
How do I turn off "default" for pages 5.1. I still want pages 4.3 to be default.

I think you need to remove 5.1 from your system to do that. Since it's useless except as a means of exporting files back to Pages 09 format, you might wanted to be sure that all files you actually need to work with are exported to 09 format and then trash 5.1.
