I recently updated pages and cannot figure out how to center a table? Any suggestions? Using the circle in the upper left hand corner does not seem to work as suggested. Also wondering how to highlight. I see highlight under insert but that is only to highlight while working on the text and does not print out.

If you change Text Wrap to Automatic then the Align dropdown is enabled.
I just figured out that if you grab the line of text above the table and the line of text below the table and center the whole thing, the table centers. However, you do have to go back and fix the text to go left. I bet that is not how apple wanted to work but it does. I know there has to be another way

To get it to move with the text and follow what Peter has described, I believe that Object Placement needs to be set to Move with Text, which sets Text Wrap to Inline with Text.
By clicking to the right of the table, you're selecting the line the table is on. You can then set the text alignment to center and the table will move with the text.
This example uses the settings for inline text that we've described. I click to the right of the table (or move the cursor up or down until it lands slightly behind the table) and select the Center text alignment. If text is inserted above the table it is moved down and maintains its centered position.
Select the upper left circle to select the entire table. Your Format > Arrange tab will be highlighted. On that tab's panel, there is an Align selector. Choose Align Center.
Select the text in your table cell that you wish to highlight. What you want is Character Fill Color, which lives in the gear drop down next to underline in the Text tab. This will paint color behind your text that survives PDF and printing.
Seems to be disabled for me too. The only way I can select the whole table is to go to edit then select all. There is no align center under format or arrange. I think the table much be locked some how and needs to be changed to a floating table before it can be centered.

While we're talking about pages....I also cannot figure out how to make all the rows in a table even. I know I can drag them but it is too difficult to get the exact size needed wit all rows.

Select the entire table with the upper left dark circle. Your Format > Table tab has Row & Column Size. With your entire table selected, you can use the spinners to change the row or column values to your taste, or just select Fit.
I really appreciate all the help. When I use that alignment bar it seems to be only for text. I don't see it on any other tab in the inspector. I might be missing it. This is an example of what I need to center. The tables are always between text. I have figured out how to get even rows/colums and highlight. Thanks for that everyone.

If you have the table pasted into the text (inline) it acts exactly like a big fat character, so if you centre the text of the paragraph that it is in, the table gets centred.
The question is do you have it pasted in the text as an inline graphic?

Sounds like you do not have the Table in its own paragraph. ie with a return before and after it.
Create a style for the table paragraph and another for the regular text, then apply them where needed.

I couldn't get any of the suggestions to work – though I have to admit I didn't try really hard. I used a different workaround.
I added a new column at the left – then adjusted its size until the rest of the columns were centered (or close enough). Not a great solution for a lot of cases, but it works for me.
I can't find a way to center a table either. To hightlight text, select the text and click the gear button, then select Character Fill Color:
The Align dropdown is disabled, at least for me (5.1).
Look at the Format > Table > Resize and Format > Table > Distribute menu commands.
