I am trying to get my photos off my iphone onto my mac air. How do I get them fro syncing back on?

Have you photo stream enabled? Then disable "Automatic Upload" in iPhoto's iCloud That will prevent the photo stream from uploading all your new photos from your mac to your iPad.
