I have a mid 2012 MBP and this thread prompted me to look at my user manual (for the first time, I think).
Here is what it says under "Learning More, Service and Support":
Your Macbook Pro does not have any user-serviceable parts, except the hard drive and memory.
I was glad to see that as I paid for Applecare......

Do you have an actual User's Manual? There's only a quick-start guide posted on the Apple user manuals site.

And yes, I did install an SSD as soon as I got it using a kit from OWC.

No, there is no user manual - period. There was none in the box - that guide is the only thing that came with it.
If you'll look at the manuals available online, you'll see that there aren't any listed for any model after 2011 - they're all "important product info" and/or "quick start guide".
However, since my product info does say that both the hard drive and RAM are user serviceable, I feel that I am covered (by Apple's own language) by Applecare if I swap the hard drive which I did. FWIW, there were no seals or anything - it was a straight forward unscrewing the enclosure and replacing the drive.
And, since the OP's model appears to be the same, I would say that he is safe to do so as well - he might want to check whatever came in his box to make sure it's the same language.

a. that is the standard legalese contained in every warranty for every hardware product (including iMacs, etc) and it also applies if you damage your iMac while adding RAM, and
b. that is for a 2013 MBP which is different from a 2012 as far as user replaceable parts.
For instance, the info on a late 2012 retina MBP very specifically states that there are NO user replaceable parts (which is different from my mid 2012 non-retina MBP):

The mid 2012 non-retina MBP is the last model where the hard drive can be swapped (and, I believe, it's also the last one for the RAM).
