It will sync to Outlook via USB cable, OR to MS Exchange over the air in real time. It is not a good idea to do both, as that will result in duplicate entries.

I have now changed from a Blackberry Q10 to an iPhone 5s and all my contacts have synced across via outlook exchange. But they have not synced into their relevant/groups and none of the contact photos have synced across either.
Apple Care now tell me that this will not happen with the iPhone due to the way that this information is stored on the phone.
Do you, or anyone else there, have any other views on this please?
Contact photos will not sync because BB does not follow the contact standard. Also, In addition, you are not actually syncing with Exchange when you use a Blackberry; you are syncing with Blackberry's server, which gets its data from Exchange. In contrast, the iPhone syncs directly with Exchange using Microsoft's ActiveSync protocol. So you need to first make sure that all of your BB contacts are also in Exchange.
How about the outlook contact Categories via outlook exchange?
If you set up an MS Exchange account on your iPhone it will sync contact categories and contacts that are on the Exchange server to your phone. It will not sync contacts in Outlook categories that are not saved in the Exchange server.
It is a MS Exchange account with all contacts and categories are saved on the Exchange server.
This answer is incorrect. While it is possible to sync groups, there is no way to sync Exchange contact categories to iPhone natively. There are 3rd party apps such as Companionlink but they don't work wth OTA syncing, only when syncing via USB.
