There is no foolproof way to do what you want. That's because different people use different email client applications & there is no guarantee that any of them would provide a mechanism to automatically generate a reply with a different subject, even if you knew how to write the Javascript or other code that one or more of them might support to do that.


Instead, you could just include a brief note explaining that if they send a reply to your email address with a subject of "Unsubscribe" you will remove them from your list.


Without knowing anything about the kind of emails you are sending, if they are personal or business related, how many people are on your list or how you compiled it, etc., it is hard to suggest the most appropriate way to handle this, but you might consider an "opt in" rather than "opt out" strategy. For instance, send a one time email to everybody on your list asking if they want to receive more emails about whatever it is you are writing about, & asking that they reply only if they do.


If you are using Apple's Mail app, you could create a rule to move all the replies to a mailbox created for that if they include a particular phrase in the body of the reply (like "Send me more about {whatever}") that your rule could search for.
