How to print full image without cropping.
I can't seem to print on my Epson printer without a little bit of cropping from what I see on the screen.

What you describe is precisely how Epson default expansion to create bleed works, down the 1/8 inch amount. What printer are you using?
On my Aritsan 50, the dialogue to prevent this looks like the following image:
On my other Epson -- R1900, the dialogue is reached by selecting Page Layout Settings.

Are you printing edge-to-edge (borderless)? If so, Epson printers default to expand the photo to bleed off the paper. But all that I deal with have a setting to choose to have zero expansion. More info, please.

It crops just slightly with all sizes I print. When I say slightly I mean about 1/8". I would put up with seeing the edge drop off so that I get everything I see on the screen. I've played with the layout/image size boxes in the print menu but haven't had much luck. Just looking for a easy way to get everything I see on screen to print.

Is you printer driver up to date (check the Epson site)?
Aperture version?
OS version? (Are you really on 10.7.5?)
Complete list of Aperture Print dialog settings?
Can you quantify the missing data in pixels? (Prints are measured in inches, image files are measured in pixels.)
What other print settings have you tried? What was the result?
What is the result if you create a file by exporting an Image and print that file from another program?
What you are experiencing is not right.
Do you crop the image to the aspect ratio of the paper?
What size paper are you using? 4X6, 8X12, 16X24 ... will make the exact image without cropping any other size is going to crop. 5X7, 8X10, 11X14...
What he is experiencing would be exactly the result of choosing the print borderless, Kirby. I have always had to change the Expansion setting on Epson printers.
