Can anyone tell me how to convert back to the previous version of number? As now I can not copy and paste from numbers into prism as it crashes, as does the excel for mac so now its impossible to do work as I have to hand type all the numbers into prism.

Documents you have already created or edited in Numbers V3 can be Exported (File > Export > Numbers '09) back to Numbers '09 format.
For new documents, just make sure you are using the proper version. Then are both on your computer, but V2 was probably moved to Applications > iWork '09.

Copy/pasting from either Numbers 2 or Numbers 3 produces tab-separated data on the clipboard.
I have no problem copy/pasting into Excel on the Mac from either version of Numbers.
Perhaps there is something in your data that is causing the crash?

Thanks Jerry Ill try and open the numbers 09 first and try using that wish Id never updated my computer Im in the middle of my thesis and don't need the hassel. Thanks

Ok, I'm having a little trouble reconciling this statement in your original post:

If you are in fact able to copy-paste into Excel from Numbers 3 than you should be able to copy-paste into Prism too.
It seems very likely there's something specific in your dataset that needs correcting anyway. It's much less likely that this is a Numbers 2 vs Numbers 3 issue, assuming you have the latest version of Numbers 3 (3.2).

Sorry SGIII Thats my bad typing I meant it is not a problem pasting between excel and numbers, its pasting to Prism from either program that is causing prism to crash, it is not my data sets as I had no problem with Numbers v2 it only starting crashing when i updated my computer. Thanks anyway
Ok. Understood. I wonder if it is the hyphens/minus signs issue to which Hiroto refers. If the Numbers 3 behavior is different from Numbers 2 and it's a "bug" in Numbers 3 (as opposed to Prism) then it might help to report it to Apple via Numbers > Provide Numbers Feedback.
Perhaps Hiroto can comment on what character Numbers 3 "should" be exporting.
