How do I get in contact with Apple?

So I sent my iPhone 5s to them for repair after it stopped working. Today they sent me to a page saying that it was water damage. I'm sure it wasn't as I never split anything on it. Anyway, so I've rung my insurance since I'm sure Apple will just insist it is regardless, and they have said they will cover it, but it will happen sometime after the 3rd of September. Apple said on their page they directed me to that they will send my phone back on the 2nd of September. Obviously I want them to repair it, but not until my insurance have given me the money. There is no available contact for me to go to that I can find to tell Apple to hold on to my phone in the meantime.

The chat message page I used to contact them to get it sent to them in the first place is inaccessible to me now. It says I no longer qualify to use it. I think because they have decided it was water damage I am no longer entiltled to use the chat window to talk to support? Because I'm in New Zealand there is no apple store. So they are going to post it back to me on the second which I am unhappy about as I will have to repost it to them again a couple of days later and I get very stressed that it will go missing in transit. I would rather Apple kept it safe while I sorted out the insurance to pay the repair.
