Hi, poppyseed83.
Thank you for visiting Apple Support Communities.
I would recommend going through the steps in the article below.
Resolve iOS update and restore errors in iTunes

Cheers,

If there was a workaround there would be no Apple Pay, because the card issuers would refuse to participate.
My point exactly. This is happening for a reason.

From what I've seen, that's happening anyway. There are several nearby stores that were accepting Apple Pay but, for some reason, are no longer doing so. Apple Pay is not as common as I would like it to be.

I find the opposite. More merchants are accepting it as time passes. At least among the stores I frequent. As stores replace their card swipe terminals with chip readers they almost always accept Apple Pay.
I'm in New Jersey. You're in Texas I think? Not sure if that's the reason for the difference. Like you, it's the stores that I frequent and that may or may not be representative of the entire market.
I'm in New Jersey, also.
I'm at Exit 5.
Hmmm... The biggie that I noticed is the local Acme. As of maybe two weeks ago, they no longer accept Apple Pay. The others are dinky shops.

Surprising. They are still on the list: https://www.apple.com/apple-pay/where-to-use-apple-pay/. I've encountered a few stores where one terminal doesn't work with Apple Pay, but none that have discontinued it across the board.
My WAG is that the local managers have a voice in the matter.
I didn't actually count but probably half of those listed are stores that I never even heard of.
Gasoline is the biggie for me. Only two are listed. There is no Chevron near me and I don't think that Texaco sells retail anymore. Besides, I buy Ajax or Cheapo Chuckie's gasoline.
At current gas prices and the surcharge for credit I've gone back to paying cash. It will be a long time before gas stations upgrade their credit terminals, because they are built into the pumps. A couple of brands have NFC readers for their proprietary tags, but they are unlikely to change because they use them to gather marketing information, something that you can't do with Apple Pay.

So jealous of you folks over in Jersey. Cheaper gas and people pump it for you.
I paid $1.339 yesterday 😉
I've pretty much gotten out of the habit of carrying cash. I frequently go for weeks with not much more than two or three dollars in my wallet. I don't dispute your comment about the cash/charge price differential but I don't drive that much any more. The saving to me isn't worth the aggravation of carrying around the cash.

That's because we don't have to pay for the privilege of pumping it ourselves!

I think that I paid even less than that but i obviously don't have a receipt to check. Of course, you're up at Exit 18 while I'm down at Exit 5 and that makes a big difference.
