Because Apple no longer supports "Bounce" in Apple Mail, how can I send a fake bounce message, so that certain people who refuse to stop sending emails will think my address has changed and stop sending? HELP, please.

If it's spam you're getting, not messages for which you know the authentic origin, this won't work. The "from" addresses in spam are always faked/spoofed, or sent from some hapless user whose computer has been enslaved by a botnet. All bouncing will do is confuse this poor person, who really isn't responsible for the spam.
And if by some unlikely chance the spammer used an authentic return address, all you're accomplishing is letting them know you've received their spam.
Right now, it IS a specific person whom I wish to block. So thanks anyway.
I did block the person on my email account company's site. But now I can't delete their name from my "Address Panel" — no way no how.

Yes, I blocked the person. On Mac Mail, which is what I use, the Address Panel is in the Window pull-down and it shows all my contacts. I have tried to delete this person's address but it won't delete. I just hope the block works. Thanks.
