Can you edit Top Sites in Safari 8(Yosemite)?
Wondering if you can edit the Top Sites like previous Safaris.

Yes. Mostly it works the same. Hover mouse over top left to delete/pin.
A bit different is that to manually add a new site you need to first click the address bar to see and highlight the full URL and you can then drag it to the top icon in the Favorites Bar. Probably other ways to do that as well.
But in previous versions of Safari, there was an "Edit" button that allowed to change the number of top sites displayed. Is this setting also possible in Yosemite?
You change the number of sites shown in Top Sites in Safari > Preferences on the General tab.
Or you can edit the plist file with Text Edit.
~Library/Safari/TopSites.plist
I think that what Cliftonnn was asking was not is there a way to add a site to the favorites bar, but can you edit Safari's top sites, by adding a new site to the top sites. I think that the way top sites is 'supposed' to operate is sites you visit frequently will appear there. A lot of us remove all website data, when we close out of safari, so these top sites will always refresh. Is there a way to change the generic sites that Safari chooses. Honestly I have never used Wikipedia, and probably never will, and would like to add other sites to that list.

To add a new Top Site, go to the site and then click the address bar to see and highlight the full URL. Then drag that URL to the Top Sites icon. The Top Sites icon is at the left end of the Favorites bar. Dragging to that icon doesn't add the site to favorites -- it will add it to Top Sites.
