I can't edit the song title anymore in iTunes 12.0.1
Or am I missing something?
I usually would just click on the song and it would let me change the title of the song, now it's not doing anything.

I had the same problem. The edit option wasn't highlighted. I went to my playlist and it worked there. It only works on your playlist not under Music. Then sync it. That worked for me. Hope this helped.
Here's what worked for me.
Plug your device into your computer, you'll see a list appear on the left side of the program window, click "summary", scroll to the bottom of the window and check "Manually manage music and videos", click "apply and begin editing.

underneath should be library with music highlighted
right click any song, album etc and it should be able to edit

I Hope someone has a different way to do this or Apple needs to fix this asap.

You can't change details of a track that is marked as Read-Only. Otherwise I cannot think of a good reason why you can't do what I can. 😕

I know you have a PC. Here's what worked for me on a Mac. Maybe there's a "Finder" equivalent on your PC.
1. Highlight the song in iTunes.
2. Right click on song.
3. Select; "Show in Finder".
5. Edit in Finder.
6. Verify changes in iTunes.
7. Click on song in iTunes and it automatically remaps to the proper file path and the song should play.
This worked on my iMac, good luck.
Highlight one or more songs, Keep shift key down, right click, keep shift down select 'get info' and the old edit box will appear that will let you change the fields.
Unable to change the name of a song in itunes 12. Right clicking and opening up "get info" only seems to work with songs I've purchased thru itunes store. I've tried all else suggested on this site - nothing works with my pc. Never had this problem with the older version. BTW, none of my 18,000 songs are marked as "read only", but It appears that the files are "read only" since the only field I can change is the rating field.
See Repair security permissions for iTunes for Windows. If it isn't read-only status that is a problem then it could be other security permissions.

I followed your first, and found that User, Admin, etc., already have full privileges. Also listed is WMPNetworkSvc which has ready only. I have no idea what this is (remote access?) and could this be mucking things up?

At a guess that will be connected to a Windows Media Player sharing service. I'd leave it alone. As long as both your account and SYSTEM are listed with full access you can move on to the step "replace inheritable permissions..."

That did it!!
I went to the root folder where the media resides, and changed the permission(s) there.
I'm curious. When you load iTunes, does it have presets that it loads for permission levels, users, etc.?

I don't know for certain how it works internally but it would seem that some file operations are actioned via the SYSTEM account and some via the users account. As long as both have full access rights everything seems to work properly. If iTunes detects that it doesn't have permission to make changes when working with a single file then it displays them as uneditable in Get Info. When working will multiple files it just won't apply them. My guess is that something changed in iTunes 12 regarding which account it uses.
