I live in the US and have a friend who lives in the UK. I understand that imessage between all apple devices is free, and the plan that I have includes unlimited messaging. If I message her off of wifi, will I be charged extra?

The unlimited messaging on your cellular plan refers to SMS & MMS text messages (i.e, all messages other than iMessage) and may or may not include international messages.
iMessages are always free (including international). If you are not connected to wi-fi they would consume a very small amount of your cellular data allowance. If you are on wi-fi they would be completely free.
