Try Settings; General; Accessibility; Zoom; Zoom Filter below- from Greyscale to None

Try Settings > General > Accessibility > Greyscale 'off'


And check what you currently have Settings > General > Accessibility > Accessibility Shortcut (the last option on the Accessibility screen) set to (the setting controls what happens if you triple-click the home button) - if it's currently set to 'Greyscale' then you may want to select a different option on that screen (tapping an option turns it on/off), and you can have it with no options selected.
