Try Settings; General; Accessibility; Zoom; Zoom Filter below- from Greyscale to None

I went to settings, then general. Click on assesability then scroll down to the bottom to assesability shortcuts and click on that. This gives options such as colour invert and colour filter. Tick colour filter, then came out of settings and click the home screen button 3 times and it revertes back to colour. Good luck.
Try Settings > General > Accessibility > Greyscale 'off'
And check what you currently have Settings > General > Accessibility > Accessibility Shortcut (the last option on the Accessibility screen) set to (the setting controls what happens if you triple-click the home button) - if it's currently set to 'Greyscale' then you may want to select a different option on that screen (tapping an option turns it on/off), and you can have it with no options selected.
