I just added a gmail account and when I compose a new message I can't see the "from" field. Using the "View" dropdown I can see that it is checked, but it does not appear in the message itself. Thank you.
Here is what a new message window shows for me - it doesn't have a From: field either. Don't recall if it ever has, but never really noticed this bit of detail. The messages always get thru, so didn't ever think it a problem.
I don't see anything titled "Message Attributes" so assume you are talking about the function the View menu serves rather than anything exlicitly in that View menu.
What version of the Mail are you using (click on the "Mail" menu then the "About Mail" to see the version.

I don't see this option under "preferences-->accounts-->Outgoing Mail Server-->Edit SMTP Server List" for either of my 2 email addresses.

The problem is I had checked "Use only this server" for both accounts (one a work Exchange account and one a Verizon home account). When I unchecked that for the Verizon account the From field reappears in the compose window.
Where do you see "From" in the View menu? On my Yosemite MacBook there is nothing related to From in the View menu (except in the "Columns" but that pertains to what fields are shown in the list of messages in the main Mail window, not creating a new message).
I'm guessing that what you are trying to do is be able to select which of your multiple accounts you want a message to show as being from. It appears that whichever is the current account is what get's filled in as the from address. To set the current account click on Mail in menu bar, then Accounts. This brings up the System Preferences "Internet Accounts" pane from which you select one of the previously setup id's.
Is this what you mean?
I am actually talking about the new message draft page. Not the mail mail pane. Since I deleted my gmail account and added it back to fix another problem, the "from" field disappeared from the new message draft. If you click on the View dropdown you see "message attributes". I assume this means "message" attributes. Mouse over this and the fields appear. However, most all are gray and not accessible. Oddly enough, the "From" field is checked. But this may pertain to the main mail pane as you assumed, and not the message. Who knows. I can't find a setup selection for the new draft message to add the "From" field.... like the CC and BCC which are in the "View" dropdown.

The screenshots you put up are what I see. In older versions of Mail the "From" field was visible when composing a message, and you could use the dropdown menu to select which account you were sending from. Now you can't do that in Yosemite. Which means you can't switch which account you are sending from if you are replying to a message.
There ought to be a way to select which account a message is being sent from from within the compose window, without having to switch to a different inbox or going to system preferences.
The From field will only show if you have multiple SMTP servers. If both are gmail, it likely didn't set up a separate SMTP server.
Either way, you can edit the SMTP server list by selecting that from the Outgoing Mail Server popup in the Account pane of Mail preferences.
Make sure there is an SMTP server for both accounts. If there already are two distinct SMTP servers, then I don't know what is wrong.

I've been equally puzzled by this spotting a behavioural difference between 2 Mac running Yosemite...
What solved the issue for me is a tick box on both SMTP outgoing mailservers saying "only use this server". Leaving that un-ticked on both accounts will make the 'from' field appear upon composing a new message.

I was only able to see the "From:" field after enabling multiple email accounts.
When I had only one, the system was probably trying to simplify my view by hiding the "From:" field - since mail was only ever being sent from one account. Now that I have 2 email accounts enabled, I get a pull-down menu as the content of the "From:" field allowing me to select which account is used to send.
