Can I use Apple TV to play my iTunes music through my av receiver

Yes given that your av receiver got either an HDMI input or an optical audio input.

Like SeaBeast said, as long as you have the proper connections that should be fine. You may need to initially set it up and program it by connecting it to a TV monitor though so you can see the options and settings you want for your purpose.

Hi, I had to restore my apple tv and it was connected to a receiver - now it shows up on Airplay but it does not play music through the receiver any more. I am assuming I need to connect it to a TV and set it up to play. Do you know what I need to select to set it up to play music using a receiver? Thank you.

A Restore will wipe the device and reload the firmware, it will be just as it was when you purchased it. You will need to connect it to the TV to do the initial setup and then it should work via receiver again.
