I find the visual equalizer painful to use; I just want to be able to use the AU graphic EQ with sliders for each frequency and cannot seem to find it. Please advise on how to bring this EQ up.

Open the Smart Controls for the track, then the Info panel.
Reveal the Plug-ins and click a free spot to add an Audio Unit.
Scroll down in the Plug-in list to "Audio Units".
One more question about this: how do you make the AU Graphic EQ display in landscape horizontal format rather than portrait or vertical? Your screenshots show it horizontal but on mine, they are vertical, making it awkward to view. Thanks again.
I don't know. I dd not do anything special; my screenshot is showing the default on my Mac. Are we using the same version of GarageBand? Version 10.0.3?
Perhaps the audio units installed on my Mac are different, since I have also Logic Pro X and MainStage installed.

Either it is cased by different MacOS X versions, the Apple Audio Units are installed by MacOS X - my version on this MBP is 10.10.2, or your patch "Amanda Acoustic" adds special settings.
