I Updated to iOS 8.1.3 however got an email saying I signed into FaceTime - I have never used FaceTime - has someone hacked my account?

I understand that you have concerns about the security of your Apple ID as you do not use FaceTime. This sounds like the option to use FaceTime may have been selected on setup after the update. If you do not wish to use this feature, you can sign out by going to Settings > FaceTime > select the Apple ID > Sign Out.
