To stop the update of an app, search the app on your screen, tap on it to stop the download, then tap and hold until it starts to shake, hit the little cross to delete the updating app. If you synced the app using iTunes and you did not yet update the apps in the iTunes library, connect to your computer and sync the older version back again.
