All I want to do is back-up my IP6, or at least see the different back-ups that I have on my computer. But when I plug in the IP6 it takes me to an ITunes page where I can see all my albums, but not any drop down menus that lets me see my devices.

Make sure that you are using the latest version of iTunes as the iPhone 6 runs exclusively on iOS 8(+).
iTunes contains the set of drivers for the computer to recognise it so if it is not up to date you will be unable to sync your iPhone.

On iTunes top left click the device icon (rightmost icon: you have Music, Movies, TV Shows, Apps...) and in the left panel click Summary.
