how can I find pictures if I don't know the dates that were taken

I am new on photos and trying to get a better understanding how it works, and the best way to organize the pictures. Should I create albums for ALL the pictures? Should I use keyboards? Should I change name of the pictures?

Where can I get an overview or instructions how to use photos?

It helps to add location data to the photos before importing them to Photos. Then the Moments and Collections will be much more useful. You can find then the photos by the location as well as the date.

But when you import your photos to Photos, select all photos in the "Recently Imported" album and create an album. Give the album a descriptive name, and group related albums by folders.

There is the Photos online Help: Photos Help Learn how to use Photos on your Mac with this online resource.

And you could buy an eBook:

I have not read this book yet, but the series is usually very good:

"Photos for Mac: A Take Control Crash Course," penned by Jason Snell, formerly of Macworld and now at Six Colors.
