My Apple Watch will not accept my passcode. I know the passcode I am using is correct. When I received it yesterday (5/6/2015) there was an option in the iPhone Watch app to continue without passcode. That is gone today, and as a result the watch is completely useless. Is there anything I can do short of returning the watch to fix this?

You could try a reset from the Watch app on the phone - it's under Settings, General at the bottom.
That resets all settings on the watch and should allow you to start again
