I am also having this problem. I have upgraded to a new iPhone and want to transfer my data from my old phone via iTunes, but I cannot turn off "encrypt iPhone backup" for the old phone in iTunes because it is greyed out.

Therefore, while I can make the backup TO iTunes just fine, I can't restore the backup FROM iTunes to the new phone because it wants an encryption password, which was apparently pre-set since time began, as I have tried every ancient password of mine I can think of.

I went to Settings> General> Profile as instructed in this thread, and found mine has the name of my service provider (Consumer Cellular) but how do I delete this profile? I called Consumer Cellular, but they had no idea.

Ultimately, I need to know can I get my data switched over to my new phone. Thanks!
