My Ex partner hacked all my emails and phone.
I eventually got phones back but I m having trouble as she has her email down for rescue, and it doesn't show up in my email list to change.

Once you're logged into appleid.apple.com you can go to the Password & Security tab on the left side. Answer your security questions and then you can remove the rescue email.
