More info please. Saving pages as text is as easy as using the "Save As" menu to save as text.
If you want something to save the current browser's page as text, that may be hard because shell cannot interact with browsers, unless you can identify the cache page. If you have a bunch of HTML file that yu want to extract the text from, there are shell commands to do it.
Do you mean stripping out the HTML from the command-line? You could try a Perl script from the
perlfaq. If you think you'll be doing a lot of it, definitely look into installing HTML::Parser from CPAN.
There are some GUI programs that will do it, too.
BBEdit will, as will
TextMate. I'm sure there are other, but those are all I could think of off the top of my head.
