I have an Apple Watch Sport. Sadly the ion-x glass is no match for granite counters. I called Apple about this question but I don't get a straight answer, some say it's $60 others say it's $200! I do have AppleCare. I was also wondering how much it cost to replace a Apple Watch sapphire display.

Since they said Apple Watch and left out the word Sport they had used earlier I believe that was just a rhetorical question to see if it was higher, I don't believe they were asking about putting a Sapphire screen on their Apple Watch Sport. Apple's nomenclature strikes again.
It depends on how bad the damage is to your Apple Watch Sport. If just replacing the screen will fix it then it is $60, if there is serious damage then they do an out-of-warranty replacement of the entire watch for the $200 you were quoted. You won't know for sure until they look at it.
You have AppleCare+, or you have the normal warranty? If you have AppleCare+, the price is detailed in the information you got when you bought it.
I don't thinks they will replace your Sport edition with sapphire.
