What's the difference between back-up and syncing?

backup is a carbon copy of the data on the ios device which can be required to the same device or a new device making it as the system was when the backup was taken


sync is keeping the list of contacts, mails, appointments and apps the same on a computer or icloud as on the ios device

this does not include app data such as game progress and scores and settings and the likes.
