How can I keep Apple watch from recording steps when I cycle

How can I prevent Apple watch from recording steps while I'm cycling. Seems like double credit. Is it also skewing move credits and active calories?

It's fine when it rains, but not perfect in strong sunlight.

I got it before my watch so used it with my Strava app to record outings, I usually know where I'm going so looking at maps isn't an issue generally. When I do look at maps it's not as a pre planned route so I usually have to swipe or zoom or something and need to stop anyway, but on occasions I have had to shield it from the sun with my hand to see it properly.

I still put my phone in it when I go cycling, it protects it from rain and other potential damage, but now I have my watch, I use that for most things (but not everything).
