Every now and then while I'm listening to Apple Music, the music will stop and a pop up will say that I need to sign into Apple Music in order to listen. How did I get signed out and how do I sign back in? Each time this has happened, I've confirmed that I'm signed into iTunes and eventually have to restart the app all together.

I found a super simple workaround for these Apple Music problems.
I switched to Spotify. I am not joking - it's much better
Listing to a Radio station worked for me too. This should give Apple an idea where to look to solve this annoying issue.
What I don't understand is why I need to sign into Apple Music to play songs I have burned to my library from CDs. What happens if I cancel Apple music?
Thats my point, the tracks I am talking about aren't Apple Music, they are from my CDs. I already own the DRM!
2018, and had the same problem. I tried to do some suggestions but didn't work, then I tried to remove all songs that I dowloaded and re-download it again. Surprisingly it worked.
It's 2018 and this is still not fixed... I've been using Apple products since 2008, and I love them, but they really need to get their **** together on so many levels...
