IT seems every time I get a call and I go to mute it by covering the watch with my palm it crashes and has to reboot? Very frustrating every time. Any suggestions?

Have you tried a force restart?
Press and hold both the side button and Digital Crown for at least 10 seconds, until you see the Apple logo:
Even when I put my hand on the clock, to cover the display of the Apple Watch, this restarts unexpectedly.

Yes I have tried a forced restart and I have also tried reseting it too. So far no luck It still keeps crashing.
It seems that others are also experiencing the same problem. One person noted that the feature worked fine in watchOS 1.0 and has only caused restarts since he updated to watchOS 1.0.1 (current version).

watchOS 2.0 is due for release this Fall / Autumn.
