My videos are loaded into Photos as MP4 files. Photos converts them to m4v files when transferring to flash drives or to my desktop.
I want them to remain as MP4 files when transferred otherwise I have to do lengthy conversion back to MP4. iPhoto previously did not do this.

That won't happen if you: 1 - Option-drag the video thumbnail to the Deskop or thumb drive: 2 - export via the File ➙ Export ➙ Export Unmodified Original... menu option.
Either one of those methods will give you the original mp4 file.

I am struggling with option 1, if I am doing correctly, still is not working.
But option 2 the export method definitely worked. I tried with one of my videos and yippee it was successful.
I guess it will also work by selecting many videos at the same time.

The Option-drag method is a bit touchy and takes some clicking and then slow drag until the + sign appears and then drop on the Desktop. I guess with the Option key held down Photos has to go searching for the original in the Masters folder to being copying to the Desktop and that takes some time.
Photos is converting videos MP4 to m4v but not wanted.
