In a no signal area I cannot access ANY music

I bought my 64gb iphone 5 to enable me to load my entire music collection and it have available when camping in no signal area's and when abroad. I found this weekend that in a no signal area I cannot access ANY music, my own or that downloaded from itunes! Why?

This ruined the weekend as I was so angry about this! Can this be restored?

What happens when you open the music app?

All music selected is greyed out. When I attempt to play any song I get message that suggests that if no wifi available to connect to gprs. This does not help with no signal hence left stranded. Also only music downloaded from itunes is listed.
