Glad you found what you needed. Numbers '09 has an offline users guide that you may be able to find. I couldn't tell from your question that you were using Numbers'09. My screenshot is from Numbers 3.5. '09 is still superior to 3 in printing control but it looks like 3 has caught up here.

Page Count can be found in the Insert menu (shown in Quinn's initial response). Here it is again, with highlighting applied:

Oh!... I have iwork (Numbers 2) in my apps and I understand it is Numbers '09. But I also have Numbers 3.2.2 and this is the version I always use, however those instructions for '09 worked for me. What Barry replied seems what I am dealing about. Any way, your answer made me to look for more information and this is good 🙂
