There are two separate 'boot ability' constructs at work.
1. Macs use EFI 1.1 (or higher) and use the EFI boot.
2. Windows installations on Mac models prior to Late 2013 use legacy MBR method. The DU reports EFI boot ability. System Preferences -> Startup Disk uses a 'bless' command (checkout man bless in terminal) and the --legacy and --legacydrivehint parameters to boot MBR disks. Here is the command extract.

3. EFI Windows installation on models after Late 2013 can use EFI Boot or legacy MBR boot depending on the installation.
