I need to extract audio from a .m4v

Is it still possible to this with iTunes 12.2.1.16? If so, how do I do that again?

iMac (21.5-inch, Mid 2014), OS X Yosemite (10.10.4)

I don't know if it was ever possible to do it with iTunes. iTunes at best has very rudimentary editing capabilities as it is not designed to be an editor -- you use Garageband or iMovie for that. If you can't find out how to do it with iMovie (which I don't use) you can probably do it with MPEGStreamclip which has an item under one of the menus to let you save the separate streams.

I should add this will not work with DRM protected iTunes Store purchases.
