Is it possible to export an entire message thread as a single unit?
I would like to have the ability to select a complete thread and send it to notes or email.

That capability does not exist in iOS. An iOS data extraction program that runs on your computer may be able to, something like TouchCopy. I've never used it, so I can't be sure.
If you have a Mac you can enable Continuity between iOS and your Mac, and view the message threads in the OS X message app. There you can select all of the text in a thread and paste it into a document.
I've never used TouchCopy (Mac and Windows) but I have used PhoneView (Mac) to archive my text messages. It works very well.
