How do I copy and paste text in Messages so I can send the message to another person. I can copy, but there's no option to paste, or for that matter, forward a message to another person,

On the iPhone, are you trying to just foward a single message, or all messages in a conversation?
for single text, just tap and hold on the message bubble you want to copy, and a pop up will show to copy
Then tap and hold on the message you want to paste, and select paste
