Remove those songs from the list of items in iTunes set to sync with the iPod, and then sync it. If you're syncing it manually, select the iPod in the iTunes sidebar, find that music, and press Delete.
There is no way to do that from the device itself.

If sounds like you have your iPod set to load manually (not using automatic syncing). If so, select iPod in iTunes, so that you see its settings screen in iTunes window. Along left side of window, in the sidebar, under On My Device, click Music. To the right, you see the list of songs on your iPod. Select song you wan to remove from iPod, and press Delete on keyboard. You can do this with more than one selected at once. This only removes songs from iPod; it does not affect songs in your iTunes library.
