iPad apps not in my iTunes screen

When I sync my iPhone and iPad to my desktop iTunes my apps don't show up for my device. I have about 80 apps on my phone but only about 8 apps show up to install or remove. I can remove the apps on my phone but in the past I saw a list of all apps that I could install or remove. I am also trying to find out how much memory an app uses but can't figure out how to get that info.

iPhone 5s, iOS 8.4

The apps will only show in that list if you have them downloaded in the My Apps section of that computer's iTunes library. If your iPad or iPhone is not on iOS 9+ then File > Devices > Transfer Purchases should copy them over to it - or you can redownload them (if they are still in the store) directly on your computer's iTunes via the Purchased section (click on your name / icon towards the top right of iTunes and then click Purchased on the popup).

You can see how much an app is taking up via Settings > General > Storage & iCloud Usage > Manage Storage directly on the device

Thank you for the information. I was able to find the memory used by an app quickly with your response. I was also able to download the apps to my desktop iTunes so they are now visible there. What I don't understand is why they went away. They have been there in the past, I download 95% of my apps to my desktop then sync them to my phone or iPad. Is there something I could have done in recent syncs that would have deleted them from my desktop?

I don't play that game, but from their website (using it on 2 different devices should be effectively the same as reinstalling) : http://candycrushsaga.com/help/en

If I try to re-install the game, will I lose my progress?

If you have connected the game to your Facebook account, your progress will be saved. However, if you’ve never connected to Facebook and played the game offline, your progress will be saved locally (on the device) and will therefore be lost when the app is deleted or the phone is restored to factory settings. We recommend connecting to Facebook regularly to ensure your progress is always saved.

You can also create a King.com account (visit King.com) and sync you progress with your King profile to ensure it is saved.
