Hi

Use either Outdoor Walk or Outdoor Run.

Your choice of activity type determines which sensors and data sources the watch uses.

For example: if you choose Outdoor Walk or Outdoor Run, the watch can use data sources including the built-in accelerometer, built-in heart rate sensor and, if you also take your iPhone with you, Location Services (GPS) data (to help estimate your distance and pace). This will also help to calibrate your watch, which may improve the accuracy of various estimates made by the Activity app and Workout app.

For precisely that type of workout, I choose Outdoor running. It works fine. I suspect Outdoor Walking would as well. There really isn't much, if any difference between the two. It's more of a way to to track different kinds of workouts if you care to. But, as I'm trying to be a runner, I chose running.
