How do I copy more than 1 page in books?

I can't scroll down when I select more than 1 or 2 pages when they are displayed on one screen

I believe that this is by design. Only the first 199 words of your selection make it to the clipboard. The iBooks app also appends an ellipsis in parentheses to indicate the cut as shown below and some additional language identifying the author and title (also shown below). This action is completely independent of DRM. Even if the words are all yours (you are the author), iBooks imposes this limitation and labeling. Obviously, this is to placate copyright holders by imposing inappropriate limits on fair use and works in the public domain. Apple has chosen to err on the side of the rights holder, not the reader.
