I understand that your iPhone is exiting recovery mode while you are trying to restore it in iTunes. Let's see if we can figure out what is going on.
My question is, are you still downloading the restore file? If you are, then typically after 15 minutes of waiting, you would need to do the same steps again to be put into recovery mode for the restore to complete. Take a look at the article below for more details.
