Why isn't my live photo moving?

also, if you edit a live photo, it will not play, check that your 3D touch is enabled and when you take a photo ensure you enable that sun like logo in the built-in camera app
So basically, there is no way to make the live photo move like how the Apple Store did on the display set. The only way to make the Beta swim is to touch it and and it swim for less then 5 seconds.
Don't know how they have it in Apple Store but you have to 3D Touch the wallpaper to make it move.

yes you have to touch it to move, and when you select it as a wallpaper for your lock screen, select live photo
