Have you tried restarting your iPhone? After it restarts, try initiating the update again.
If that doesn't work, consider uninstalling and reinstalling Netflix. Then log back in with your email and password.
I had the same issue. After calling both Netflix and Apple, I found out how to fix this while on hold with Apple..
Go to Settings- General- Storage & iCloud Usage- Manage Storage. Once here, find your Netflix app and delete it from here (this was the only place I found that I could delete the app so I could redownload it). Now, you should be able to go to the App Store and download Netflix again and this should fix the issue.

If you are in the US and have either Verizon or ATT -- it was on the news that Netflix has been slowing down feed to those carriers -- so a burp anywhere can stop the feed where its not doing anything.
What if it doesn't uninstall or delete? I've tried and it won't, even after I restart it.
